Genoa Cake
Ingredients:
1/4 lb butter
1/4 lb sugar
3 eggs
2 ozs sweet almonds
1 ozs peel
6 ozs flour
2 ozs sultanas
2 ozs currants
lemon rind
Method:
Beat the butter and sugar to a cream; add eggs 1 by 1 and beat each 5 mins. Fold in the flour, then the grated lemon rind peel, sultanas and currants and 1/2 blanched almonds. Put into a papered tin. Sprinkle almonds on top and bake for 3/4 hour in a moderate oven.
