Sponge Sandwich

Ingredients: 

4 eggs
4 ozs flour
4 ozs sugar
2 tablespoons boiling water
Flavouring

Method:

Separate yolks from whites. Add pinch of salt to both. Whip first the yolks and water until frothy and creamy. Then whites to stiff froth. Add sugar and heat until the whole is a white shiny smooth mass. Get yolks well mixed in. Fold in sifted flour very gently. Add flavouring. Pour into two well greased sandwich tins which have been coated with equal parts flour and castor sugar. Bake in a moderate oven for 15 mins. Turn on to a cake tray. When cool make a sandwich with jam or any other filling desired. Lemon curd being the most popular.
