Almond Fingers

Ingredients:

4 ozs fine flour
2 oz butter
1/2 oz sugar
6 drops ratafia
yolk of 1 egg
cold water
1 oz ground almonds

Method:

Rub butter into flour but not so finely as short crust, add almonds and sugar, add 2 tablespoons water to egg and ratafia. Make into paste. Cut into fingers, 1/4'' in thickness.

 Almond Paste

Ingredients:

2 ozs ground almonds
1 oz sugar
white of egg (half beaten)

Method:

Add sugar to egg. Mix to a stiff paste with almonds. With a knife dipped in cold water put a little roughly on top of fingers. Sprinkle little almonds on top. Bake for 15 mins in a fairly hot oven. Cocomut may be used instead of almonds.
