Brandy Sauce
Ingredients:
5 egg yolks
1 pt milk
3 ozs sugar
2 tablespoons brandy
Method:
Beat yolks with sugar. Add 1/4 pt cold milk. Boil remainder of milk slowly. Add very slowly to beaten yolks and sugar. Put back on (or very low gas) cooker and stir briskly. Finally pour into basin and whisk briskly.
