Easter Cake
Ingredients:
1/2 lb butter
1/2 lb sugar
14 ozs flour
5 eggs (large)
grated rind of 1 lemon
1/b sultanas
2 ozs cherries
2 ozs peel
teaspoon of baking powder
Method:
Cream butter and sugar and add lemon rind; add eggs and flour alternately; add baking powder to last lot of flour. Beat well. Fold in sultanas. Cut cherries in 1/2 dips in flour. Bake for 2 hrs in a moderate oven.
