Plum Pudding (M. Francis Keating)
Ingredients:
1 lb raisins
1 lb currants
12 ozs sugar
12 ozs butter
4 ozs ground almonds 2 teaspoons mixed spice
1/2 teaspoon nutmeg
1 lemon - rind & juice
1/4 pt milk
5 eggs
1 lb sultanas
12 ozs self-raising flour (sifted with little salt)
12 ozs bread crumbs
8 ozs candied peel
2 ozs whole almonds
1 teaspoon black treacle
pinch ground cloves
1 glass spirits - brand or whiskey
1/4 pt stout
Method:
Put dry ingredients into basin. Add fruit - almonds and peel. Sift flour with spices and salt. Mix well with dry ingredients and fruit.
Beat eggs well/ Add milk and stir into pudding mixture. Add lemon rind and juice. Mix thoroughly then add spirits and stout. Beat in warm treacle/ Cover and leave overnight.
Fill into greased bowls (2 layers or 4 medium). Cover with greaseproof paper and tin foil and tie well. Steam for 8 hrs - and again for 4 hrs on Xmas day.
