Rich Cake
Ingredients:
1/2 lb buterr
1/2 lb barbados sugar
1/2 lb currants
1/2 valencia raisins
2 ozs glazed cherries
2 ozs whole almonds
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
pinch baking powder
1/2 lb sultanas
1/4 lb peel
3/4 lb flour
5 or 6 eggs
1 teaspoon perisin essence
1 glass whiskey
Method:
Cream butter and sugar. Add perisen essence. Add eggs one at a time. Beat well and add sifted flour after each egg. Add baking powder to the last lot of flour. Mix fruit peel and almonds and fold lightly into mixture. Put into cake tin lined with one sheet brown and 2 white greased sheets/ Make hollow in centre and brush over with cold water. Bake in moderate oven for 3 1/2 - 4 hours. When taken out, pour glass whiskey over it.
