Swiss Rolls
Ingredients:
2ozs flour
3ozs sugar
2 eggs
1/2 teaspoon baking powder
1 teaspoon essence
1/2 cup warm jam
Method:
Paper and grease a flat tin. Sprinkle over with a teaspoon of castor sugar and flour mixture. Separate the whites from the yokes. Beat whites to a solid froth; put yolk and sugar in a bowl, heat until white and of creamy texture, add milk and essence. Blend smooth, mix in flour, then fold in the whites of eggs without breaking them down; add baking powder. Pour mixture into tin and bake in a moderate oven for 10 mins. Then turn on to a sugared board, spread over with warm jam, roll up, put on wire tray to cool. Serve on fancy paper on glass dish.
