Victoria Sponge

Ingredients:

3 large eggs
3/4 cup sugar
1 cup flour
pinch salt
1 tablespoon cold water
1/4 cup boiling water

Method:

Break eggs in bowl. Add salt and tablespoon cold water. Beat 10 mins. Add sugar gradually while beating and the beat 10 mins longer. Mix 1/2 small teaspoon baking soda and level spoon cream of tarter to flour. Put flour all at once into eggs. Beat lightly and mix well. Add 1/4 cup boiling water just before pouring into tins. Pour in to papered tins. 

If 3/4 cup and 3/4 corn flour are used the cake will be very light.
