Yorkshire Tea Cake

Ingredients:

1 lb flour
1/2 teaspoon salt
1 ozs sugar
1 1/2 gills tepid milk
3 ozs sultanas
1 egg
1oz butter
1 oz peel
1 oz yeast

Method:

Beat the eggs well; heat the milk and melt the butter in this. Add the yeast to the egg and add to the flour; mix to a loose dough and leave to rise. Shake and leave to rise for the second time. Bake in a good moderate oven for 30 mins.
